My 'Spring' Chicken & Spinach Salad Ingredients: 4 cups raw baby spinach, washed and drained with stems removed 3 cups cooked chicken, cut in chunks 3/4 cup slivered almonds (or chopped nuts of your choice) 2 medium-sized apples, cored and chopped 1 small red onion, thinly sliced Dressing: 1/2 cup oil 1/4 cup apple cider vinegar 1 small cloves garlic, minced 1 teaspoon sea salt or to taste 2 tablespoons honey Directions: In a large salad bowl combine the spinach, chicken, apples and almonds. In a small bowl, combine the oil, vinegar, garlic, salt, and honey. Whisk until well blended. Pour over salad and toss lightly. When serving, garnish with thinly sliced red onion. Contributor's Note I simply love hearty, simple-to-make, full-flavored salads. They prove to be great one-dish meals.
