A Unique Candy Recipe Using. . . Mashed Potatoes?
Peanut Butter Potato Pinwheels Who knew that you can make candy using mashed potatoes! Apparently the potatoes provide the needed starch without adding a potato-ey flavor. Anyway, you can adjust the amount of peanut butter and sugar to your own tastes.
Ingredients: 4 tablespoons mashed (cooked) potatoes, chilled
2 tablespoon softened butter
2 teaspoons cold milk
1/2 teaspoon pure vanilla extract
5 cups confectioners' sugar (adjust as necessary)
1 cup peanut butter Directions: In a bowl, combine the cold mashed potatoes, softened butter, milk and vanilla extract. Then, add enough of the confectioners' sugar to create a stiff dough-like consistency. You can lay out wax paper on a flat surface (like your countertop) and sprinkle the surface with some confectioners' sugar. With a rolling pin, roll the "candy dough" out until you have an even layer. On top of this rolled out layer, spread on a layer of peanut butter.** Carefully roll the peanut butter/candy layer into a tight jelly-roll type spiral. Wrap the roll in clear wrap and chill in refrigerator for 1 - 2 hours. Remove the wrap and using a sharp knife, cut the candy log into into 1/4 to 1/2 inch thick slices. Can be stored in the refrigerator in an air-tight container.
**If you want to get creative, try sprinkling shredded sweetened coconut or crushed peanuts to the peanut butter layer before rolling. . . . . . . . . . |
